April 29th, 2009

Here we go again! Here is how today went....

Breakfast : 1 cup Jumbo Rice Krispies w/milk - 2 points

Snack - Banana - 2 points

Snack - Carrots - 0 points

Lunch - Roast beef sandwich w/cheese, popcorn and a 1 point bar - 6 points

Snack - 1 cup Jumbo Rice Krispies w/milk.....AGAIN!!! Can you tell I LOVE it? - 2 points

Dinner - Creamy Chicken-Spinach Soup with 1 Arnold sandwich thin with spread - 10 points

Dessert - 2 brownies with FF hot chocolate - 2 points

The soup was AMAZING!! I got it out of my 5 ingredient WW cookbook I have, and last night was the first time I tried it. I know we are kinda getting out of "soup" season, but it was so tasty, that I'm sure I'll even make it in the summer! I will make sure to post the recipe if anyone wants it.

I will be back tomorrow...I may not share how much I am UP at Weigh In tonight, but know for sure that I am back on the right track now! See you tomorrow!

I'm such a loser....not literally....

I've done so bad the past week or so....friends visting from out of town, lots of parties/get togethers, monthly "visit" from a friend, and headaches for the past week have not helped. I know, there should be no excuses, but it is what it is, and I have not done well. I seriously don't even want to weigh myself. Ugh...I hate when I do this. What is wrong with me?????? I'm starting again today though...I'm going to try to go to the gym after work and work out a little bit. I know I'm going to be up tomorrow at WW, but it's not like it will be a shocker. I guess everyone has weeks like this sometimes, but it doesn't make it any less depressing. I'm going to get back into taking pics every day and posting again. It's so hard to remember to do it, but I'm going to try to be more strict and make myself do it.

April 21st, 2009

Ok...I'm trying to forget that this past weekend ever even happened. It was a weekend that was surrounded by food for 3 whole days, and I'm sorry to say, I didn't do well. :-( All I can do is get back up and start again though! Here is yesterday's log!

Breakfast - 1 cup Jumbo Rice Krispies, 1/2 cup milk - 2 points

Snack - 1 bag popcorn, Diet Root Beer - 1 point

Lunch - 1 Arnold Multigrain Sandwich Thin with 6 slices roast beef, 1 slice of 2% cheese and some mayo - 4 points ( Oh MAN...are those sandwich thins good!!! I am addicted now.....)

Dessert after lunch - Mint Cookie Crisp -1 point

Snack after work - 1 Skinny Cow Mint Ice Cream Sandwich - 2 points (YUMMY!)

Dinner - Chicken and Spinach pie with Mashed potato of my favorites! Also, 2 rolls with spray butter ( which I forgot to take a picture of...sorry ) - 10 points

Dessert - 1 1/2 Rocky Road Brownies - 3 points ( by the sister in law was over last night, and she also does WW, and we came across this recipe in my cookbook that I had never tried. A 9x13 pan, cut only 8 ways, is only 2 POINTS a brownie! Amazing huh? I purposely undercooked them a little so they were really moist! They were really delicious, and a lot of "bang for your buck" so to speak! I will post the recipe soon....)Well, there was my day. Don't be suprised if tomorrow looks very similar...I'll be eating a lot of the leftovers! Have a great day!

Well, I'm a couple days behind...believe it or not, I've actually still taken pictures of everything I've eaten the past few days, but I have been so busy and have not had time to post them! I'm not going to catch up 3 days now, so I'll start tomorrow by posting everything I ate today.

Weight Watchers was last night and I was down .8 of a pound. I'll take's not up! :-) I love our meeting so much, everyone is so nice and supportive, and the leader is awesome. I feel like I'm really getting to know all of them, and its great. I would never change groups!

I figured since I wasn't really posting anything exciting today, I would post the recipe for my favorite "Chocolate Chocolate Brownie Cups." They are 2 points for 2 brownies....or 1 point a piece if you only want one! Let me know if you try them!

"Chocolate Chocolate Brownie Cups"
Butter-flavored cooking spray
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
8 large egg whites
2 cups raw sugar
1/2 cup unbleached all-purpose flour
1 cup unsweetened cocoa powder
2 teaspoons instant espresso powder
1 teaspoon baking powder
1 teaspoon salt
1/2 cup mini semi-sweet chocolate chips

Preheat the oven to 350°F. Thoroughly mist two 12-cup nonstick mini-muffin tins with spray.
Use a sturdy whisk or spatula to mix the applesauce, vanilla, egg whites, and sugar in a large mixing bowl until well combined. Add the flour, cocoa powder, espresso powder, baking powder, and salt. Stir until just combined and no lumps remain. Working in batches, fill each cup until just barely full. Sprinkle about one-fourth of the chips evenly over the brownies in each of the tins. Bake for 10 to 12 minutes, or until a toothpick inserted in the center comes out dry (a few crumbs are okay).
Transfer the tins to a cooling rack and cool for 5 minutes. Use a butter knife to gently lift the brownies from the muffin tins (if they stick, carefully run the knife around the edge of each cup). Cool on the rack for another 10 minutes. Repeat with the second half of the batter and the remaining chips.

Each 1-Decadent-Disk serving (2 brownies) has: 109 calories, 2g protein, 23g carbohydrates, 1g fat, less than 1g saturated fat, 0mg cholesterol, trace fiber, 139mg sodium.

I will be back tomorrow...its going to be a very tough weekend with wedding rehearsal dinner, a wedding, and then dinner at someone's house for their birthday on Sunday! Ahhhh!

Day Seven - April 13th, 2009

I was really hungry all day today for some reason. It seems like after I have a day of eating alot of bad food, ( like Easter ) the next day my body wants the same amount of food again! :-) Here is a look at my day!

Breakfast - Jumbo Rice Krispies w/milk - 3 points ( are you surprised? ;-)
When I was at work, I was so hungry, and didn't really bring anything to eat, so I had a Zone Protein bar for 4 points. They say they are suppose to be filling....but I didn't think so! It tasted really good though!
For lunch, my mom brought in leftover coldcuts from Easter. I had a turkey sandwich, 1 slice of RF swiss cheese on light bread - 5 points - and Baked potato chips - 2 points. A VERY high point lunch for me...and I regretted it when I was starving until dinner!!
For dinner, I had the Spinach Chicken w/mashed potato crust meal that I posted about before. I love it! 8 points
For dessert I had 2 of my brownies, with about 2 tablespoons of pb ice cream! LOL....even 1/4 of a cup was 2 points, and I only had 1 to spare, so I did a very little! It was delicious!
There you go! If I could just fit excersise in one of these days...I would be doing great! :-) Have a good one!

Easter Sunday - April 12th, 2009

Well...I had a not so good day today. I was expecting it though, because it was a holiday. I started off good and had a 2 point breakfast, and for lunch I had a cold cut sandwich on light bread, with lite mayo and lite cheese! Pretty good...right? The bad things I had was some taco dip, brownies, and a couple too many of my kids jellybean/sixlets! Then when we got home, Ben made a pizza, so I had a piece of that too! is a new day though! I didn't take pictures cause I was really busy and such. I will post either later tonight, or tomorrow morning today's results! Hope you all had a great holiday!

Day Five - April 11th, 2009

Weekends are always a bit more challenging for me, because Ben is home, so I don't have my normal schedule and such, but I did pretty good today!

Breakfast - 1 cup Jumbo Krispies, 1/2 cup skim milk, 1 cup V8 - 3 points
We had to go pass out some flyers for our church in the afternoon, so I popped a bag of 1 point popcorn, and brought it with me to eat ( I took a picture of the pop....but I didn't end up drinking it till with dinner...not that it matters, but just thought I'd let you know! :-)

Then, we took the kids to McDonalds when we were done. Ahhhhh...always a hard place for me. I usually order great choices, but then end up finishing my kids french fries, chicken nuggets, cheeseburger, etc. I ordered a Fruit and Yogurt Parfait today for 3 points, and am proud to say that I didn't even eat 1 french fry! Afterwards, as the kids were eating McDonald's cookies, I grabbed a 1 point bar...the cookies and cream one. They are new, and are GREAT! They taste like a very dense, chewy Oreo..and for 1 point? You can't go wrong....

By 4:00, I was starving cause the only thing I had for lunch was the yogurt, so I made myself a bean burrito with the leftovers from my birthday. Wow...VERY filling for 7 points! I had 1/2 cup of refried beans on it, which is only 1 point, and that really fills you up! It was very yummy! I also topped off this meal with yet another 1 point Cookies and Cream bar!
So, by this point, I had 8 points left for the day, so I decided that I was going to save them and have a big 8 point bowl of chocolate peanut butter ice cream when we got home from a friends house that night. Well, while we were there, they pulled out leftover cake from a shower they had that day, so I decided to have 1 slice of that instead. I'm sure it was less than 8 points, but I just figured to be safe, I would eat that and call it a day. I didn't get to take a picture of the cake...but I'm sure you can imagine what it looked like! :-)

There you have it! For anyone wondering, I get 24 points each day for my weight, so if you are ever involved in this enough to do the math, you know now! Easter will be challenging, but I'm going to try to still stay on program! I'll post tomorrow with the results! Have a happy Easter everyone!

Day OFF - Thursday, April 9th

So, I have decided, gentle readers, that I will be taking every Thursday off from taking pictures and blogging. This is because for as long as I have been doing WW, every Thursday, I eat a small 3-4 point breakfast, and then nothing until 7pm after I weigh in. Let's just say, the food I consume after weigh in with my remaining 20 points is not picture worthy! Ok, so its not all that bad, but its kind of a night off for me. I will still tell you, last night Katie and I split a calzone, and then I had a cupcake. There you have it! :-)

Good news is, I was down 2.4 pounds last night! Yeah!!! I will resume blogging tonight....I'm warning you, it may not be too pretty seeing that it is my birthday...but I'll let the chips fall where they may...or cake...:-)

Day Two - April 8th, 2009

Ok, so I'm hoping some Weight Watchers people will read this, comment and be encouraged, cause I didn't realize how hard it would be to remember to take pictures and post each night! LOL...I'm not going to stop, but just thought I'd share that it's not as easy as I thought it would be! So, here is my day....

Breakfast - 3 egg whites, 1 piece 2% milk cheese, 2 slices light bread - 3 points - (Delicious! )
Mid-morning snack at work - 1 cup grapes and a WW peanut butter cookie - 2 points - The cookie isn't the greatest in my opinion, but where else are you going to get a peanut butter cookie for 1 point? So I guess it's worth it....

Lunch - 1 can Select Harvest Italian Wedding soup and 5 Ritz crackers - 6 points....and my dessert was a 1 point Chocolate Caramel Bar from WW...yummy! :-) I got home from work and I was I had my 1 point popcorn and 2 of these tiny little cookies for a total of 2 points. I'm not going to lie, the cookies are REALLY good...and I could easily eat 20 of it's hard to stop at 2! I did though...yeah Jessica! :-)

For dinner, I had a Smart Ones Four Cheese Pizza and green beans for 7 points....

...and after church I had my favorite dessert ( and diet cherry pepsi ) to top off the night!
There was my day! I hope I'm down some at weigh in tomorrow night! My birthday is Friday, and then Easter is Sunday, so it's going to be a rough weekend...but I'm hoping I can continue to mantain some control! :-P See you tomorrow!

Day One - April 7th, 2009

It was actually fun today taking pictures of everything I really kept my eating in check! I didn't have any bites, licks and tastes, cause I didn't want to cheat! :-)
For breakfast I had 1 cup Jumbo Rice Krispies, and 1/2 cup of milk for 3 points. It is my new favorite cereal cause it tastes great, and it's very low in points!
Then I was at work for the day, and I'm always so hungry there because I am sitting at a desk. I eat SO much just out of boredom and something to do, so I'm trying to do better at that! I had a yogurt for a snack ( 2 points ). I thought it was 1 point, but it was really I was a little disappointed, but it was still delicious!
My mom brought in homemade chicken noodle soup for lunch. It only contained chicken, chicken broth, onions and lots of carrots. I counted 5 points for the soup, and then I had 2 points worth of Ritz crackers....not quite enough crackers for my liking, but I would totally get carried away with Ritz, so I had to put a limit on them!
That was normally WAY more points than I eat for lunch, so I had to be really careful to not eat too much during the afternoon. Around 3:00pm I decided to have some Jollytime popcorn and a diet cherry pepsi. ( only 1 point! ) It really hit the spot! :-)
For dinner I had Chicken-Spinach Pie with Mashed potato crust. If you want the recipe, here is the link - It is so delicious, and I figured it to be 8 points for 4 servings. It is pretty filling too, and very healthy! Sorry the picture doesn't do it really is good!
To finish off my night...I had my old faithful "Brownies with ice cream" for only 3 points! I tell ya, it's the best 3 points you'll ever eat! :-) I will eventually post the recipe for the brownies. Nothing like eating my delicious dessert and watching Biggest Loser after the kids are in bed!
Well, there you have it folks! Wasn't that so exciting????? I had a great day today, and didn't go over my points. Yeah for me!! Hopefully tomorrow goes as smooth! Have a good night!

Here we go!

I came across a blog the other day, where the person posted every night with pictures of what she ate that day, with points values and such. I thought I would try it out! I'm sure it's going to be very boring to most, but to those of us doing WW, it's a great way to get new ideas for snacks/dinners, and sometimes just knowing someone else is doing the same thing as you, day in and day out, is encouraging! I will TRY to take pics every day, and post every night! If you read this, please comment so I know you are there! Even if no one reads it though, it will be a good way for me to keep myself accountable to myself each day. I wanna lose 20 pounds by fall! LET'S GO!!
