Well......

I'm sorry it's been SO long since I've posted! Life has been busy! I've had great weeks on plan, and HORRIBLE weeks, eating everything in sight! Isn't that just how life is?
I have great news though! I just found out today, and I am expecting baby #3 in August 2010! We are so excited! Although I would have loved to be thinner before I got pregnant, I'm still just as thrilled that God gave us this baby in His timing! I guess I won't be really blogging on a "weight loss" blog anymore, since I'll be blowing up bigger and bigger, lol, but I will post time to time to update you all, and I will be back in September 2010 to lose all the baby weight! :-) Hope you all are doing great!

Not much time...but...I had to share...

Guess what I did last night? Well, bad things first. I was having a great day, eating wise, and it was 5pm and I had 10 points left. Then, to make a long story short, I was somewhere where we ordered pizza and these huge, gooey, soft, chocolate chip cookies. Oh. My. Gosh. To DIE for! So, I pigged out...had 2 pieces of pizza, and one HUGE cookie. Well, I was feeling a little guilty, seeing that I ate all of this before watching Biggest Loser....the show that is supposed to motivate me NOT to do that! So I went home and figured I would get on the elliptical. Do you know how long I stayed on? 100 minutes! Yes...that is ONE HUNDRED minutes!! WHOO HOO! I burned 1,600 calories too! I was so proud of myself! I'm so sore and tired this morning though! :-) I figured I should have burnt off at least most of what I ate, so I was glad! Just wanted to share!

Well on my way...again...

Hello my fellow bloggers/followers! How have you been? Sorry I haven't posted in a few days...life has been crazy busy...as always! I have been doing well on plan for the past week, so that is good news! Lol...it is so easy, yet so hard for me to just FOLLOW THE PLAN! I don't know what my problem is sometimes! :-)

Tonight I made Spaghetti Squash for the first time...and guess what? I'm in love!! I made it instead of pasta, and topped it with homemade meatballs and sauce. ( not homemade sauce though...haha...I'm not that good! ) Honestly, I could barely tell I wasn't eating pasta, and it's good for you, and 0 points for a cup! Can you believe it? All you do is take a spaghetti squash, cut it in half, and cook them face down on a cookie sheet at 375 for about 45-55 minutes. Once it is done, remove the seeds, and scrape the insides out with a fork into your bowl. It looks just like spaghetti, and tastes just as good! I can't believe I didn't find out about this earlier! I have a feeling it is going to be a staple dinner now!

Another thing that I was pretty excited about today, was I had a $2.00 off 1 Healthy Choice Frozen Meal coupon, so I made 25 copies of it! I got 25 frozen meals for $6.00!!! I was so excited! I like them even better than the Smart Ones frozen meals, and I was so happy to get them for so cheap!

Overall, a good day today! I'm hoping to be down a good bit on Thursday...I was up 4 pounds last week from my past few weeks of doing bad! YOWZERS!!! Hopefully I will lose most of that, if not all of that, this coming week! Have a great rest of the weekend!

I will have to share the recipe for the Chocolate Melting Cake! It is from "Deceptively Delicious" and it is YUMMY!!!!! I had it last night while watching The Biggest Loser! Did any of you watch it last night? Man, I was crying...I can tell it's going to be an emotional season. I can barely look at the lady who lost her family without crying! Can you even imagine? Exp 2 week postpartum? You are so emotionally unstable already! Wow...I hope she goes all the way...she is so inspiring! Just the fact that she is choosing to go on in life, and not crawl into a hole and die, ( like i probably would ) is amazing! Love her!
I'm really hoping to be at my lifetime weight by October 1st, as my dad and I are taking a trip to NYC to see the Mets play the Astros! We are going to be able to get in the stadium before the gates open, and meet the players, take pics etc! It's a long story, which I sure you all don't want to hear! ;-) Anyway, I'm sure I'll be in pics, and ones like that, you show everybody, and I don't want to look FAT! I have to work super hard these next couple of weeks! See ya tomorrow!

Honesty is the best policy

I'm so sorry I haven't been posting. I'm sure I have let a lot of you down! In all honesty, I've have done horrible since my last post. I've gone away 3 times since then for the weekend, played and done photography at weddings, and have had 3 parties. All of which, revolved around food, of course. I have probably gained like 5-6 pounds. Isn't that gross? I'm so sick with myself. My main problem? I haven't been tracking. I haven't been excersizing, and I've been so busy, that I've missed 4 of the last 5 meetings. Life has just been overwhelming, and sadly, I have given in to all the temptations that were involved. Life happens.

To the best of my ability, I am going to try to start posting daily again. Maybe not pictures of my food every day, but at least a food log. That really helped me before, being accountable to you all and reading your encouraging comments. Please hang in there with me. It really does help....even if I am never an encouragment to you! LOL...all I ever post about is how bad I do! :-)

So, that is all I have to say. Tomorrow is a new day, with no mistakes. All I can do is keep on keeping on, and starting fresh again. I WILL be back tomorrow night with a post about how my day went, and maybe a new recipe soon too. Hang with me...will ya?

I'm back...I think!

Ok...so I think I am back on the right track! I am on day 2 of being back on plan...and I feel good so far! The past two days, as soon as the girls wake up, I've been pushing them in the stroller, and going 2.1 miles. It may not sound like a lot, but it is really hilly, and not to mention I am pushing 80+ pounds of kids/stroller! I am really tired when I come back...and it takes me about 40 minutes. It feels good when I'm done though!

So, I really caught baby fever this week....it kinda hit fast! :-) I refuse to get pregnant before hitting Lifetime, so I NEED to just hunker down and get serious. Sigh...it is just so much easier said than done! Thank you for all the encouraging words on my last post...it really does make a difference when I know people are reading, commenting, and going through the same things as I am!

I'm off to have some 1 point popcorn! Once the summer slows down, I will start posting pics of my food again! Keep up the good work!

I hate this sometimes

Why? Why can't I be that person who can eat whatever they want and not gain an ounce? I have just been really frustrated lately, and to be honest, on top of other things, it made me eat this past week. I mean, eat. Whatever. Whenever. I hate when I do that too...its not like it fixes anything! I WAS only 2 pounds away from lifetime...and now, oh my, I don't even want to know. Sometimes I feel like I shouldn't even blog, because it seems that every post is just telling everyone how bad I've been doing. Isn't that encouraging? HA.
I'm just going to be honest. I hate losing weight. I hate having to do Weight Watchers. I hate having to have to think of every morsel of food that enters my mouth, and where it will add an extra pound to my body after I eat it. I hate people that have flat stomachs after having children...and after only having 2 kids, I hate the fact that I have like 30 rolls. ( ok...I don't actually hate the PEOPLE who have flat stomachs....lol...you know what I mean! :-) Sigh, ok I'm done now. I'm trying to be encouraged to start fresh and new and lose the weight I need to get to lifetime. Sorry for boring you....just sharing my life.

2 pounds away!!

Well, I am 2 pounds away from Lifetime!! That is not my goal weight, but it is the highest I can be for my height, so I picked that as my "goal". I'm really excited, but honestly, I haven't lost weight in like 2 months, so as close as it sounds....it seems really far away too. I'm going to try REALLY hard to do perfect this week, and not use any of my Flex points if I don't REALLY have to. Tonight I have my nephews birthday party with pizza and cake, but I am going to bring my own dessert. I just want to do this...and not have to pay anymore!!!! I still would like to lose another 10 pounds IDEALLY....but I would love to do it without spending $40 a month!

Oh yes....and the smore recipe on WW Chicks blog....A M A Z I N G. All I can say is I wasted 8 of my points on them yesterday...but they are so delcious! :-)

WHY??????????

Why did I just eat like three handfuls of my girls animal crackers? Did great all day, and then did that. I stink at this sometimes. I am never going to get to goal doing things like this...what is wrong with me???? I know all the information in my head...but sometimes actually DOING it is another story. Sometimes I wonder if I will EVER lose these last 6-8 pounds. Sigh...I'm not happy with myself.

August 1st

Good morning everyone! I don't know if you have seen yet, but please visit Jen's blog and send your condolences to her. Her mom, who was her best friend, was tragically killed on Friday when a card pulled out of their driveway and hit her as she was taking her grandson on a walk. I seriously was so saddened by this all day yesterday. It just reminds me how short and fragile life really is. Please pray for her and her family.

Here is how my day went yesterday...

Breakfast - 1 cup Raisin Bran with 1/2 milk - 4 points

Snack - Fiber Plus Bar - 2 points

Snack - 1 cup blueberries - 1 point ( which were AMAZING! I got them at a Farmer's market, and wow...they were soooooo good! )

Lunch - Subway Turkey Salad - I guessed 5 points, but it probably wasn't quite that much. It was just lettuce, spinach, cucumbers, 3 slices of turkey, some mexican blend cheese on top, and a couple squirts of the Honey Mustard dressing, cause they said it was the lowest fat one they had. I have to brag for a minute...we went to Wal-Mart for lunch, and I got my girls the macaroni and cheese that they make there. Let me just tell you, if you like macaroni and cheese...DON'T try it! It is so unbelieveable! I could eat it all day long! BUT, yesterday, I got it for them, FED it to them, and didn't even have ONE NOODLE!!! YEAH FOR ME!!!! :-)

Then I got the kids Subway M'M cookies for dessert...again...one of the yummiest things! So I went and bought myself the WW brownies, and had one of those instead - 2 points

Snack - Popcorn - 1 point

Dinner - Turkey Burger with cheese, on a Sandwich Thin and fresh, steamed green beans - 6 points

Snack - WW 1 point bar - 1 point

Ok, so at this point in the day, I had 2 points left, and I was going to have a Vitalicious brownie, with frosting, to finish off my day. WELL, my husband called on his way home from being gone all day, and said,"I have a suprise for you!" He brought home Bryers Mint Chocolate Chip ice cream...my FAVE!! So, I had 3/4 of a cup for about 4 points, and stopped there.

So, I went over my points today by 2, but I did work out for 30 minutes on the elliptical, so it probably evened out if I used my activity points. Today is one of my best friend's daughter's 1st birthday today, so they are having a huge picnic/party for her. I am going to try my best to stick to plan! I will keep you posted for sure! Have a great Sunday....and hug your family today...you never know how long you will have them.

July 31st

Here is how my day looked yesterday....sorry, no pictures, but it is better than nothing!

Breakfast - 1 1/3 cup Honey comb with 1/2 cup milk - 3 points

Snack - Special K Bar - 2 points

Snack - 1 point Brownie - 1 point

Lunch - 2 Fat Free Hot Dogs, 1 sandwich thin, ketchup and 15 Fat Free Pringles - 5 points

Dinner - Spinach Lasanga, carrots and broccoli with 2 TBSP of 3 cheese Light Ranch Dressing, 1 sandwich thin with spray butter - 12 points

Dessert - Vitabrownie with Chocolate Frosting - 2 points

So I ended up using 25 points out of my 24 I'm supposed to have, so I decided I needed to earn an activity point! After my kids went to bed, I did my elliptical for 45 minutes and burned 680 calories! I don't know how accurate the whole "calories burnt" is, but all I know is I was sweating like a pig, and I worked my butt off! I also got all my water in, so I felt pretty good about the day! :-)

A crazy week coming up!

How have you all been? I really feel horrible I haven't been writing as often! I really do try! ;-) My husband is gone for the week at a camp for our church, so it has been even crazier around here as I don't have him around to help! Makes you really appreciate your husband when he's gone!

So next week, we have a 4 day camping trip we are taking with some of our closest friends, and all our kids. There will be 12 kids under the age of 5! WOW! I'm really looking forward to it...that is...everything but the food! Wanna see the food schedule?

Thursday - Chicken Alfredo ( the best in the world, but probably about 20 points a cup! ;-)

Friday -

Oh yeah, and everyone has to bring a couple dozen or so cookies or brownies, and snacks. There is just something about camping...you always end up eating alot! I'm going to try to bring some substitutes for me....like the Arnold Sandwich thins for sandwichs, hot dog rolls, pulled pork rolls, and 1 point wraps for the tacos. I'll bring some FF hot dogs, and maybe some turkey bacon. I've just been doing so well as of late, that I don't want to throw it all away in a 4 day weekend!!!

Tonight is WI. I'm not sure how I am going to do, because I have other issues that are effecting my weight today, but hopefully I'll at least stay the same, which means I did lose some. Know what I mean? :-) I will let you all know!

Problems...and the holiday!


Sorry I haven't posted...I was having a problem with Blogger and it wouldn't let me sign on for some reason! Weird!
SO...today is July 4th! I must say, I love celebrating the holiday for the REAL reason, our independence, but I wish there was not so much food involved with the day. I'm really going to try my best to make good choices though....My goal weight is still 13 pounds away...and I STILL want to be there by September if at all possible. Sigh....anyways....I hope you all have a wonderful holiday with friends and family!

15 week challenge!

So, I joined a 15 week challenge from Amy's blog, and I'm really excited about it! I'm sure I won't win, because it is all about who loses the biggest percentage of weight, but I'm going to have fun doing it! She has challenges each week that you can do to earn more points. This week I am supposed to make a recipe, healthier and lower points, by switching some stuff around. I haven't figured out what I'm going to do yet, but it will be fun!

Yesterday went well! Here is how it looked!

Breakfast - Jumbo Rice Krispies - 2 points
Snack - Smartfood Popcorn Clusters - 1 point
Lunch - Healthy Choice Chicken Alfredo - 5 points
Dessert - 100 calorie pack Grasshopper cookies - 2 points
WORKOUT - 30 minutes
Snack - Strawberry jello dessert - 2 points
Snack - Vitabrownie - 1 point
Dinner - Flatout Pizza - 6 points
Dessert - Weight Watchers Ice cream bar - 2 points

So my friend and I are thinking about walking a 10k on Saturday. I've never done one, but I figured if we power walked it, it would be some good exercise, especially on July 4th, when we may be eating more than usual! I don't know if it is too late to sign up...so I have to look into it! Should be fun! Have a great day!

WEIGH IN DAY

Well, honestly, I was pretty happy about last night. I was only up .6 of a pound. Not too bad for not going in 3 weeks. I have 9 pounds till goal weight...and it is really killing me! I've been right around the same 5 pounds for months now! I'm really trying to crank down again though...I want to be at goal before fall...and also cause we would like to have another baby next summer or so, so I want to be a Lifetime member before I get pregnant!

I just want to push the "Pizza" I posted about a couple days ago. I seriously am addicted to it. It is so amazingly good, and I think I may even eat it instead of real pizza. I'll give the exact recipe that I use, in case you want to try it!

"Flat Out Pizza"

1 Light Flat Out Wrap ( I use the Italian flavored )
Light Ragu Sauce ( or any sauce that has 40-50 calories per 1/2 cup )
2% milk OR Weight Watchers Mozzarella cheese
Turkey Pepperoni

Put the wrap on a cookie sheet and spread some sauce on it. Top with as much cheese as you like! ( I'm a big cheese lover, so I normally put 1/2 cup on....4 points worth! ) Put 6 pepperonis on top! ( LOL....I count 1 point for the sauce and the pepperoni, because both of them by themselves are 0 points, but I'm sure if you added up the calories together, it would be 1 point! )

Cook at 400 for 8-10 minutes...until the edges are a little crispy. Slice into 6 slices...and DEVOUR! I love spinach, so when I have some in my fridge, I would probably even forgo the pepperoni and put lots of spinach on instead! You will feel like you are eating an entire thin crust pizza. This ROCKS. Enough said! :-) GO TRY IT and let me know what you think!

So, tomorrow is WI day....and I'm very nervous. Suddenly eating all that yummy food on my 3 trips doesn't sound like it was a good idea! :-) I'm really hoping its not TOO bad....umm....please? Here is what today looked like....

Breakfast - Oatmeal with Splenda brown sugar - 4 points

Snack - 1 cup blueberries - 1 point

Lunch - Tuna sandwich with a slice of 2% cheese - 6 points

Snack - Popcorn - 1 point

Snack - 100 calorie Cookies - 2 points

Dinner - Flat out pizza! ( new fave! ) - 7 points

Dessert - 2 brownies with frosting - ( my ALL time fave! ) - 3 points

June 22nd, 2009

I had a good day today, although I didn't end up getting to do my elliptical like I wanted to. I planned on doing it after the kids went to bed, but I had such a migraine headache, that there was NO way I could do it! Here is my day....

Breakfast - 1/2 cup oatmeal with 1 TBSP Splenda brown sugar - 4 points

Lunch - Healthy Choice Meal - 7 points - I gotta say, this meal is GREAT! It doesn't taste like a frozen meal at all! All three parts of it are awesome...it's one of my very favorite fast meals!

Snack - Yogurt - 2 points

Crystal Light Popsicle - 0 points ( sorry no pic! )

Dinner - Flat Out pizza - 6 points - You could easily make this for less points...but I am a cheese loving girl...so I had 4 points of cheese on there!! It was DELICIOUS!
Snack at my husband's softball game - 1 bag popcorn and an apple - 2 points

Dessert - Vitabrownie with frosting - 2 points

There you have it! We need to go grocery shopping really bad, so I need to be a little more creative today I think! I'm off to work, and then softball later tonight! Ciao! ( not literally...like "goodbye"....it's less points to do it that way! :-)

Things have been CRAZY

I'm so sorry...I have barely had time to take a shower lately! I've been working, then coming home and working on pricing tons of stuff for my garage sale this weekend! It has been insane around here! I'm literally non-stop busy running until Monday, the 22nd when we come back from Massachusetts! I feel horrible, cause I want to be posting, but honestly, there are about 3 million other things I should be doing this next week! I will TRY to post, if I can, but if I can't, be sure to check back on the 22nd, and I will then be back to my daily posting! Have a great week!

I'm back from the first part of my crazy week! I didn't do HORRIBLE...but I didn't do good either. Oh well...I had a great time away with my husband without the kids, and that's what counts! May 29th, 2009

Hello my faithful readers, whomever you may be! As you know, I don't post on Thursdays...but I usually post my weigh in. I went back and forth whether I would share how I did this week on the scale...and REALLY didn't want to, cause it was so bad. But, this blog, and weight loss in general, has the good, bad AND the ugly, so I will tell you. I was up 2.4 pounds from the holiday weekend. I know...terrible. But there is nothing I can do about it, besides work hard to get it off! Right? Here is a look at today!

Breakfast - Oatmeal w/peanut butter, and a VitaTop - 4 points

Lunch - 2 slices 2% cheese on an Arnold Thin grilled cheese sandwich, and 1 bag of the Smart Clusters Honey Multigrain - 4 points - and MAN...was that a good lunch! I will be having that again for sure!
Snack - 1 cup Jumbo Rice Krispies with 1/2 cup milk - 2 points
Dinner - Spinach Lasagna with 1 piece of bread w/spray butter - 11 points - this meal is so amazing...it tastes like you are just eating gobs and gobs of gooey, fattening cheese...you would never guess that it has fat free and reduced fat ingredients! YUM!
Then, my dear friends, I did FORTY...oh yes...I said FORTY MINUTES on the elliptical and burned 607 calories! Yeah for me! I had three points left...so I decided to have my newest delight....2 brownies with frosting for 3 points. Finished off the day quite perfectly I must say!
So...the next week is going to be VERY challenging for me. Let me break it down for you....

Tomorrow ( Saturday ) - My Brother-in-law's wedding/reception. Need I say more?

Sunday - Going out to dinner with friends and back to their house for ice cream

Monday - Going away for a night with my hubby to Cleveland to see a Yankees game...um lets see...hotel breakfasts....hot dogs at the game....eating while traveling there...not too pretty of a picture.

Tuesday - Still away with the hubby

Friday - Leaving for the weekend with my dad, brother and my girls for NYC for 3 days to see Yankees play at the new stadium ( YAY! ) and visit relatives. 3 more days of staying with someone and having my food prepared for me, instead of making my own and knowing the points values.

That brings me right up until next Monday. Do you agree I have a uphill battle ahead?????

May 27th, 2009

I had a good day yesterday. Of course, 1 good day, is not going to make up for 4 bad ones on the scale, but oh well. Here is a look at how my day went....

Breakfast - Strawberry jello dessert, and 2 banana muffins - 4 points ( oh yeah..that strawberry dessert? 1 point! I will share the recipe...maybe later! :-)
Snack - 1 bag popcorn - 1 point
Lunch - PB&J sandwich - 3 points
Then, I came home from work and did 22 minutes on the elliptical....and burned 400 calories! I don't know how accurate the calorie burning calculation is, but I know I was sweating and exhuasted when I was finished! :-) I'm going to try for 25 minutes today!

Snack after working out - Granola bar - 2 points

Dinner - Turkey burger with cheese and light barbecue sauce, green beans, and a pickle - 7 points
Dessert - 1 point bar - 1 point
Then we went to church, and I was in the nursery with the kids, so I had 2 points of animal crackers...those things are really good.
After church I came home and had a Vitalicious brownie, with 1 TB of the Reduced Sugar Frosting on top for 2 points. DELICIOUS.

Oh yeah, and I must admit, the Vitalicious muffin tops and brownies are really growing on me. I actually really like them now...and will order them again! I guess I needed to just give them time! ;-) That's all for today folks! I don't know if I'm going to weigh in tonight....I just don't even want to see it. I'll let you know what I decide to do! Just kill me now

That explains how I feel about the past 4 days. Wow...it was bad. Really bad. I feel like I let all my blog readers down by doing so horrible. I'm so sorry everyone. I wish I could say that I had great self control, and made good choices, but I didn't, and I'm sure going to pay for it on the scale. I don't know what else to say, besides, tomorrow is a new day, and a great day to start again.
On a happy note...I bought an elliptical! I can't tell you how happy I am about this! I'm so excited to be able to start excercising! I haven't done it in so long for lack of time, so I'm really happy to have a machine at home now! I got an awesome deal too! Here is the one that I got :

It has video games, I-Fit ( where I can buy Jillian Micheals workouts and plug them in to hear her talk to me! COOL! ) and tons of different features. I'm so excited to start it tomorrow....along with my good eating habits again. Ya know, its funny, cause its so enjoyable to be bad and eat bad while you are doing it...but it is not worth it afterwards. :-( Next week I'm going out of town twice, so I need to do really well up until then to make up for it a little bit. Memorial Day Weekend


I KNOW this weekend is going to be bad. On top of going out to eat tonight, tomorrow, family picnic on Sunday, and a huge picnic again on Monday, I have a visit from a monthly not-so-friend. Ugh. I mean, I'm not going to blow the whole weekend on purpose, but exp this time of month, I feel like I have no will power.

Also, I don't know if it's just me, but I know they always talk about "Mental Rehearsing" before going to a party/picnic. For those of you who don't know...that would be like, "Ok, I'm going to only have 1 hog dog with 1/2 a roll, and I will pick 1 dessert that looks the best and just have 1 piece of it." etc. That is great...and I do that part wonderfully! Seriously, I go to a party all prepared with what I am going to do...its just the executing part of the plan that I can't seem to go through with. For example, going out to eat with my husband tonight, I can think all I want that I'm just going to have a salad with grilled chicken...but as soon as I see the menu with a Friday Fish Fry, and Chicken French, I know that is what I will choose. After all, I'm out to dinner with my family, how often does that happen? The problem is...every weekend for this summer is crazy busy with events like this! I NEED HELP!!

What do you guys do? It just seems like I always have such good intentions, but by the end of the day, I'm always so mad at myself for the choices I ended up making.

May 18th, 2009

Ya know....I figure if the week only consisted of Monday-Friday and we got rid of the weekend, I probably would have been at my goal weight 6 months ago. Weekends are SO hard for me...for some reason I feel like I lose control. It's the combo of my husband being home and making good meals/desserts, going to people's houses, going out to eat with my hubby and girls seeing that it is the only time we are all home together, etc. Sigh....well, on to my day yesterday...

Breakfast - 1 cup Jumbo Rice Krispies, 1/2 cup milk, and an overflowing cup of strawberries - 3 points

Snack - 1 banana - 2 points
Lunch - Egg salad/mayo on a sandwich thin, Smart food caramel popcorn and a diet soda - 6 points
Snack - 1 Triple Chunk Vita Top - 1 point ( For some reason I liked the Vitatops better today...it tasted really yummy compared to last time I ate it! I think I figured out why. If I want CHOCOLATE, I won't go for a Vitatop. I would go for my 1 point brownies cause they fill that craving. But, for a afternoon snack, the Vitatops are pretty good. Make sense? :-)
Dinner - Spinach Lasanga with a Arnold Sandwich Thin w/spray butter - 9 points
Ok, this dinner was AMAZING!!! I wish I could remember whose blog I got it off of so I could give credit where credit is due, but I can't remember! I made it last night, and my non-ww sister was over and she loved it! I'm totally having it for dinner again tonight...cause I have leftovers! I will post the recipe.
Dessert - 2 brownies with 1 Tablespoon melted "Reduced Sugar Chocolate Frosting" on them - 3 points
Ok...so I came up with this brillant idea. I was making the single microwave cake w/frosting from WW Chick's blog, and I liked it, but I not a huge cake fan overall. I would rather have a brownie. But I realized why I loved that cake recipe is because I LOVED having the frosting. So, for 1 point less than the cake, I warmed up 2 brownies, then put the frosting in a little cup, warmed it up for 15 seconds and poured it over the brownies. Can you say HEAVEN????
So, that was my day. What did you think? LOL! I will now leave you with the Spinach Lasagna!

Spinach Lasagna

9 points for 4 servings

1 24 oz jar Classico Fire Roasted Tomato and Garlic Pasta Sauce
2 tsp minced garlic
pinch nutmeg ( i didn't use )
1.5 bags of fresh spinach leaves
1/2 cup fat free egg substitute
15 oz fat free ricotta cheese
garlic salt
little onion powder
italian seasonings
6 pieces lasagna noodles ( Now, I used whole wheat, so I have to think that lowered the points a little )
3 cups Weight Watchers Mozzarella cheese ( I used 2 cups of Fat Free Mozzarella cheese and the rest, 2% milk cheese. I know this dropped the points a bit too )
2 TBS reduced fat Parmesan cheese

Spray a pan with cooking spray and turn on medium heat. Put garlic and nutmeg in pan and when it starts to sizzle, add spinach leaves. Stir until the spinach leaves are wilted and then remove from heat.

In a bowl, combine egg substitute, ricotta, garlic powder, onion powder, Italian seasonings, 1.5 cups mozzarella, and spinach leaves.

Spray a 2 quart pan,( or 8x8 or whatever size you want to use) with cooking spray. Pour about 1/2 jar of sauce on bottom. Top with 3 noodles, then top with half of cheese/spinach mixture. Pour next 1/3 jar sauce on top. Repeat with reamaining noodles, cheese and sauce. Top with remaining mozzarella and the parmesan.

Cover with foil and place on a cookie sheet ( just in case of overflow ) and bake at 375 for 50-60 mintues. Uncover and bake 10-15 minutes longer. Let set for about 5 minutes after you remove it from the oven. ( Mine baked in 50 minutes TOTAL....fyi )

Ever have a day like this?

Today was just one of those days that I started off so well...then ended up NOT proud of myself at the end of the day. Here...I'll show you....

Breakfast - 1 1/2 cups of Kashi cereal with 1/2 cup of milk - 4 points

Ok, so then I had my niece's 4th birthday party to bring my girls to. Now, they were having egg salad sandwichs for lunch, so I even did so well as I made my own egg salad ( 1 egg, 2 egg whites with lite mayo) and had it on an Arnold Sandwich Thin. Great right? She had fruit skewers which was great! So lunch was - 6 points
This is where the day first went sour. I brought my own 1 point brownies for dessert, promising myself if they had cake, I would have my brownies instead. Sounds great...right? WELL, she had made yummy, soft, chewy sugar cookies for the kids to frost with her DELICIOUS whipped frosting. Oh my gosh. Some other person took over my body...and I had 2 1/2 cookies with frosting. Yup. I did. And at the moment, I didn't even care. I figured, well, I'll just eat very few points the rest of the day and I should be fine. Problem was...it was still 12:30 at the time.

Then I came home and made myself not eat anything until dinner time. Oh my gosh. I found the most AMAZING dinner. It's my new favorite...taped on my cupboard door...tastes like you are at "Taco Bell" recipe. You know I will share it...right? ;-)

Dinner - Chicken and Rice Burritos w/sour cream - 6 points
Well...if I told you my day ended there...it would have been perfect. But it didn't. I continued to have a big bowl of Captain Crunch, 3 one point brownies....I think that may be it. I did take a nice uphill walk though. I just don't know what it is, but I felt like I didn't have control last night. Ever have days like that? Most days, it's not a problem and I just tell myself "No." I don't know what it was last night...but it's over. Today is a new day, and I'm trying again! I will leave you with this AMAZING recipe! Go make it for dinner tonight...the family will love it!

Chicken and Rice Burritos

10 points for whole recipe


Serves 2 ( or 1 very hungry person! )


1 cup cooked brown rice

1/4 cup salsa

1/2 cup cooked, diced chicken ( 3 ounces )

1/4 cup 2% Cheddar cheese ( you could use regular and add one point, or FF and take away 1 point...I think! )

2 whole wheat flour tortillas ( I use the 1 point ones )

Reduced Fat or Fat Free Sour cream/salsa to dip


Microwave the chicken and salsa together in the microwave until hot. Stir in rice and cheese. Seperate mix into the 2 tortillas. For the entire recipe it is 10 points. So, one burrito would be 5 points! I'm telling you....dip it in some sour cream and you could swear you are at Taco Bell! They are so good that I am making them for dinner again tonight! YEAH!!


Also, a little tip. If you want to make this SUPER easy and fast to make, use the Minute Ready to Serve brown rice. Stick it in the microwave for 1 minute and it is ready. It is 1 cup, so it is exactly what you need for this recipe. No joke, I made this meal in less than 10 minutes! That's what I like!

May 13th, 2009

Hello Friends! Today is weigh in day...and I'm not confident in how I'm going to do. I really only had one off day...on Mother's Day...so the scale may or may not punish me for that. It's really tough losing these 5-6 pounds to get to goal weight...I've been trying to lose the same pounds for months! AHHH! Here was my day....

Breakfast - 1/2 cup egg substitute, tomatoes, spinach and 1 slice of 2% cheese on an Arnold Thin and 1/2 cup of V8 light juice - 3 points

Snack - Carrots and 2 TBSP Ranch dressing - 2 points ( no broccoli, but I forgot to take a pic and this is all I had! ;-)

Snack - Fiber Plus granola bar - 2 points

Lunch - Peanut and Jelly sandwich on an Arnold Thin - 3 points

Dinner - Chocolate Chip/Oat pancake recipe from the Hungry Girl cookbook: 4 pancakes and syrup - 4 points! Very delicious, and filling!
Snack after dinner - 1 point bar and a 1/2 cup of milk - 2 points
Dessert - Microwave cake - 4 points
This all added up is only 20 out of my 24 points...but I did have a couple of my daughter's animal crackers, and a Low Fat graham cracker....so I know it all evened out! Hopefully I do ok tonight...I know I'm doing what I can to the best of my ability, but I never know what the scale will say! Have a great one!
