WEIGH IN DAY

Well, honestly, I was pretty happy about last night. I was only up .6 of a pound. Not too bad for not going in 3 weeks. I have 9 pounds till goal weight...and it is really killing me! I've been right around the same 5 pounds for months now! I'm really trying to crank down again though...I want to be at goal before fall...and also cause we would like to have another baby next summer or so, so I want to be a Lifetime member before I get pregnant!

I just want to push the "Pizza" I posted about a couple days ago. I seriously am addicted to it. It is so amazingly good, and I think I may even eat it instead of real pizza. I'll give the exact recipe that I use, in case you want to try it!

"Flat Out Pizza"

1 Light Flat Out Wrap ( I use the Italian flavored )
Light Ragu Sauce ( or any sauce that has 40-50 calories per 1/2 cup )
2% milk OR Weight Watchers Mozzarella cheese
Turkey Pepperoni

Put the wrap on a cookie sheet and spread some sauce on it. Top with as much cheese as you like! ( I'm a big cheese lover, so I normally put 1/2 cup on....4 points worth! ) Put 6 pepperonis on top! ( LOL....I count 1 point for the sauce and the pepperoni, because both of them by themselves are 0 points, but I'm sure if you added up the calories together, it would be 1 point! )

Cook at 400 for 8-10 minutes...until the edges are a little crispy. Slice into 6 slices...and DEVOUR! I love spinach, so when I have some in my fridge, I would probably even forgo the pepperoni and put lots of spinach on instead! You will feel like you are eating an entire thin crust pizza. This ROCKS. Enough said! :-) GO TRY IT and let me know what you think!

May 18th, 2009

Ya know....I figure if the week only consisted of Monday-Friday and we got rid of the weekend, I probably would have been at my goal weight 6 months ago. Weekends are SO hard for me...for some reason I feel like I lose control. It's the combo of my husband being home and making good meals/desserts, going to people's houses, going out to eat with my hubby and girls seeing that it is the only time we are all home together, etc. Sigh....well, on to my day yesterday...

Breakfast - 1 cup Jumbo Rice Krispies, 1/2 cup milk, and an overflowing cup of strawberries - 3 points

Snack - 1 banana - 2 points
Lunch - Egg salad/mayo on a sandwich thin, Smart food caramel popcorn and a diet soda - 6 points
Snack - 1 Triple Chunk Vita Top - 1 point ( For some reason I liked the Vitatops better today...it tasted really yummy compared to last time I ate it! I think I figured out why. If I want CHOCOLATE, I won't go for a Vitatop. I would go for my 1 point brownies cause they fill that craving. But, for a afternoon snack, the Vitatops are pretty good. Make sense? :-)
Dinner - Spinach Lasanga with a Arnold Sandwich Thin w/spray butter - 9 points
Ok, this dinner was AMAZING!!! I wish I could remember whose blog I got it off of so I could give credit where credit is due, but I can't remember! I made it last night, and my non-ww sister was over and she loved it! I'm totally having it for dinner again tonight...cause I have leftovers! I will post the recipe.
Dessert - 2 brownies with 1 Tablespoon melted "Reduced Sugar Chocolate Frosting" on them - 3 points
Ok...so I came up with this brillant idea. I was making the single microwave cake w/frosting from WW Chick's blog, and I liked it, but I not a huge cake fan overall. I would rather have a brownie. But I realized why I loved that cake recipe is because I LOVED having the frosting. So, for 1 point less than the cake, I warmed up 2 brownies, then put the frosting in a little cup, warmed it up for 15 seconds and poured it over the brownies. Can you say HEAVEN????
So, that was my day. What did you think? LOL! I will now leave you with the Spinach Lasagna!

Spinach Lasagna

9 points for 4 servings

1 24 oz jar Classico Fire Roasted Tomato and Garlic Pasta Sauce
2 tsp minced garlic
pinch nutmeg ( i didn't use )
1.5 bags of fresh spinach leaves
1/2 cup fat free egg substitute
15 oz fat free ricotta cheese
garlic salt
little onion powder
italian seasonings
6 pieces lasagna noodles ( Now, I used whole wheat, so I have to think that lowered the points a little )
3 cups Weight Watchers Mozzarella cheese ( I used 2 cups of Fat Free Mozzarella cheese and the rest, 2% milk cheese. I know this dropped the points a bit too )
2 TBS reduced fat Parmesan cheese

Spray a pan with cooking spray and turn on medium heat. Put garlic and nutmeg in pan and when it starts to sizzle, add spinach leaves. Stir until the spinach leaves are wilted and then remove from heat.

In a bowl, combine egg substitute, ricotta, garlic powder, onion powder, Italian seasonings, 1.5 cups mozzarella, and spinach leaves.

Spray a 2 quart pan,( or 8x8 or whatever size you want to use) with cooking spray. Pour about 1/2 jar of sauce on bottom. Top with 3 noodles, then top with half of cheese/spinach mixture. Pour next 1/3 jar sauce on top. Repeat with reamaining noodles, cheese and sauce. Top with remaining mozzarella and the parmesan.

Cover with foil and place on a cookie sheet ( just in case of overflow ) and bake at 375 for 50-60 mintues. Uncover and bake 10-15 minutes longer. Let set for about 5 minutes after you remove it from the oven. ( Mine baked in 50 minutes TOTAL....fyi )

Ever have a day like this?

Today was just one of those days that I started off so well...then ended up NOT proud of myself at the end of the day. Here...I'll show you....

Breakfast - 1 1/2 cups of Kashi cereal with 1/2 cup of milk - 4 points

Ok, so then I had my niece's 4th birthday party to bring my girls to. Now, they were having egg salad sandwichs for lunch, so I even did so well as I made my own egg salad ( 1 egg, 2 egg whites with lite mayo) and had it on an Arnold Sandwich Thin. Great right? She had fruit skewers which was great! So lunch was - 6 points
This is where the day first went sour. I brought my own 1 point brownies for dessert, promising myself if they had cake, I would have my brownies instead. Sounds great...right? WELL, she had made yummy, soft, chewy sugar cookies for the kids to frost with her DELICIOUS whipped frosting. Oh my gosh. Some other person took over my body...and I had 2 1/2 cookies with frosting. Yup. I did. And at the moment, I didn't even care. I figured, well, I'll just eat very few points the rest of the day and I should be fine. Problem was...it was still 12:30 at the time.

Then I came home and made myself not eat anything until dinner time. Oh my gosh. I found the most AMAZING dinner. It's my new favorite...taped on my cupboard door...tastes like you are at "Taco Bell" recipe. You know I will share it...right? ;-)

Dinner - Chicken and Rice Burritos w/sour cream - 6 points
Well...if I told you my day ended there...it would have been perfect. But it didn't. I continued to have a big bowl of Captain Crunch, 3 one point brownies....I think that may be it. I did take a nice uphill walk though. I just don't know what it is, but I felt like I didn't have control last night. Ever have days like that? Most days, it's not a problem and I just tell myself "No." I don't know what it was last night...but it's over. Today is a new day, and I'm trying again! I will leave you with this AMAZING recipe! Go make it for dinner tonight...the family will love it!

Chicken and Rice Burritos

10 points for whole recipe


Serves 2 ( or 1 very hungry person! )


1 cup cooked brown rice

1/4 cup salsa

1/2 cup cooked, diced chicken ( 3 ounces )

1/4 cup 2% Cheddar cheese ( you could use regular and add one point, or FF and take away 1 point...I think! )

2 whole wheat flour tortillas ( I use the 1 point ones )

Reduced Fat or Fat Free Sour cream/salsa to dip


Microwave the chicken and salsa together in the microwave until hot. Stir in rice and cheese. Seperate mix into the 2 tortillas. For the entire recipe it is 10 points. So, one burrito would be 5 points! I'm telling you....dip it in some sour cream and you could swear you are at Taco Bell! They are so good that I am making them for dinner again tonight! YEAH!!


Also, a little tip. If you want to make this SUPER easy and fast to make, use the Minute Ready to Serve brown rice. Stick it in the microwave for 1 minute and it is ready. It is 1 cup, so it is exactly what you need for this recipe. No joke, I made this meal in less than 10 minutes! That's what I like!

A Recipe to Share!

Here is the recipe for the Fiber One Apple Cinnamon Muffins I posted about yesterday! Delicious!

Fiber One Apple Cinnamon Muffins

2 muffins for 3 points

1 Fiber One Apple Cinnamon Muffin Mix
2 over ripe, almost rotten bananas
1/4 cup egg whites, or egg substitute
3/4 cup water

Preheat oven to 400 degrees. Spray 24 muffin pan with cooking spray. Mix all ingredients together with a hand beater for 1 minute, or until mixed well. Pour evenly into the pan. Bake for 18-20 minutes.

Each muffin is 1.5 points! Obviously, I don't really count half points, so I just have 2 for 3 points! They are delicious! Let me know if you try them and what you think! I love feedback!

May 7th, 2009 - WEIGH IN DAY

Well, I was down 1.8 pounds last night! I was up quite a bit the week before, so I was hoping it would be more, but I'll will take it! I don't usually post my whole day of eating on Thursday, cause after Weigh In at 7pm, I usually enjoy myself and eat something that I normally don't the rest of the week, cause I have a whole week before I have to weigh in again! Horrible...isn't it? ;-) I actually didn't do that bad last night, probably only went 7-9 points over my daily allowance points, so I guess I'll share my day!

Breakfast - 2 cups Jumbo Krispies, 1 cup milk - 5 points - Normally I eat a bigger breakfast on WI day, cause I don't eat much else throughout the day

Lunch - 1 1/2 TB Peanut Butter, 1 TB Sugar Free Jelly on a Flat Out Light Wrap - 4 points

This is the jelly I just bought and tried....REALLY good! It's 0 points too! Only 10 calories for a tablespoon!

Then I didn't eat until weigh in. Oh yeah, did I mention my friend and I RODE OUR BIKES to WW tonight???? If you knew where I lived, you would know it's a feat to do! It's probably about 3 miles away, and the way there is pretty simple, most of it is straight down a hill. I don't have to tell you what that means on the way back....oh my....it's so steep on the way back that we end up having to walk some of the way cause you lose your balance! It's great exercise though..I must have earned a few activity points for all the extra snacking I did that night!

At Weight Watchers, I had a Fiber Plus granola bar to try to give me some energy for the ride home - 2 points - and then they gave us all a sample of the new Chocolate Brownie - 1 point. I LOVED it, but the problem is, they only come in 2 point bars, although the sample they gave us was only 1 point. I just can't justify spending all the money on the bars when they are 2 points...cause I can buy lots of 2 points snacks for way less money. Oh well...they were delicious though if anyone was wondering! :-)

Once we got home ( barely ), we had my yummy dinner that I had made earlier that day....Chicken Baseballs. It was the first time I had tried the recipe, and let me tell you, they were amazing!! I had 2 people at my house that don't do Weight Watchers, and they both LOVED them! I was so excited that they turned out so good, and I will make them again for sure! I paired it up with some steamed broccoli with a piece of 2% cheese on it, which made it 7 points for the whole meal.

Dessert....I made a parfait with Vitatops, mini chocolate chips, sugar free vanilla pudding, sugar free chocolate pudding, and FF whipped cream. I really have to say, I'm not in love with my vitatops...sniff sniff...I really wanted to LOVE them. I guess I have too much of a sweet tooth, and they are kinda dry and bland for me. If anyone has any ideas or recipes with them that you love, PLEASE share! I just spent $35 on them...so I want to use them! The parfait ended up being 6 points.

Ok, then I snacked a little after the kids went to bed....I had a handful of chocolate animal crackers with 1/2 cup of milk, and then a mini fudge round! AHHH! It was probably 8 points or so. Not too bad since I've eaten like a 1/2 a package of Oreos before on a Thursday....ok...maybe not quite that many....but almost!

Chicken Baseballs

Serves 4
6 points

3 oz. fat free cream cheese, softened
2 tsp light margarine melted
1/4 tsp salt
1/4 tsp pepper
1 small chopped onion
2 cups cubed cooked chicken
1 8oz can reduced fat crescent rolls
2 Tbsp skim milk

In a blender (or by hand) combine cream cheese, butter, salt, pepper, milk, onion. Blend. Pour mixture over chicken and stir. Separate crescent roll dough into four rectangles and seal perforations.

Spoon 1/2 cup mixture into center of each. Pull opposite corners of dough to center and seal. Place on ungreased cookie sheet or pizza stone. Bake at 350 degrees for 20 minutes.

May 6th, 2009

Hello my fellow WW followers! Well, tonight is the dreaded weigh in....all I know is I BETTER be down! I have followed the plan exactly since last WI, I don't see why I wouldn't be. We shall see...!
Here is a look at my day!

Breakfast - 1 cup Jumbo Krispies, 1/2 cup milk - 2 points

Snack - 2 TBSP Kraft 3 Three Cheese Light Ranch ( YUM ) and broccoli/carrots - 2 points

Lunch - 1 1/2 TBSP Reduced Fat Peanut Butter, 1 banana, 1 Flat Out Light wrap - 6 points

First of all....sorry that picture looks weird...i forgot to take a picture until I was half way through eating it! Second of all, I just have to say how FILLING that lunch is! I don't know why exactly, but it keeps me full for a long time, and there is nothing better than banana and PB together! :-)

Snack - 1 bag Chocolate Cookie Caramel Pecan SmartFood Popcorn and Diet Sunkist - 2 points

Snack - 1 Fudgy Peanut Butter Chip Vitatop - 1 point

Ok, so I finally broke down and spent $37 on these the other day, and they arrived in the mail yesterday. I honestly have to say, I didn't think they were as AWESOME as I've heard everyone rave about them. BUT, I am giving them a chance....I am going to try them warmed up with ice cream, and make a pudding parfait with them. I'll keep you posted! ;-)

Dinner - Corn Dog Casserole and broccoli - 8 points
This was the first time I tried this recipe, and it was really yummy! I topped it with a little FF cheddar cheese after I served out my slice. It's a great comfort food! I will post the recipe after I finish the summery of my day!

Dessert - 2 brownies, 1/2 cup of ice cream - 3 points

Let me just say, if you are a chocolate fan, on WW, and you HAVEN'T tried these brownies...you are crazy!!!!! They are so amazing...I can not even tell you! I posted the recipe sometime in April if you are interested in it!

I will leave you with the recipe for my dinner tonight, Corn Dog Casserole!

Corn Dog Casserole

1 cup finely chopped minced celery ( I did not add this )
1/4 cup diced sweet onion
1 ( 8 pack ) Ballpark Fat Free Hot Dogs
14oz Hormel Turkey Chili, no beans
1 ( 8.5oz ) Jiffy Corn Muffin Mix
1 egg white
1/2 cup skim milk
1/4 cup water
1/4 tsp black pepper
4 oz Shredded Reduced Fat Cheddar Cheese

Preheat oven to 400 degrees. Spray skillet with butter flavor cooking spray. Saute celery and onion for 5 minutes. Slice hot dogs into thin discs and add to skillet. Cook over med-high heat for 5-7 minutes. Add turkey chili and heat through. Spray 11x7 pan with cooking spray. Pour skillet contents into pan. Top with cheese. Combine muffin mix, egg white, milk, water, and pepper; pour over hot dog mixture. Bake uncovered for 25 minutes.

Makes 6 servings

349 calories, 11g fat, 3 g fiber - 7 points

May 4th, 2009

I was a little discouraged this morning....I weighed myself and I'm the SAME as I was last Thursday! How can that be? I have done perfectly for the past 4 days, haven't gone over my points, drank all my water, etc. Sigh, I better be down by Thursday....or else....;-)

Breakfast - 1 cup Jumbo Krispies, 1/2 cup milk - 2 points

Mid-morning snack - 1 Fiber Plus Dark Chocolate Almond granola bar and FF hot chocolate - 2 points

Snack - 1 banana - 2 points

Late lunch - 1 egg, 2 egg whites, plum tomatoes, spinach and 1 slice 2% cheese on an Arnold Sandwich Thin - 4 points ( this was so delcious!! I'm going to make this sometime today again I think!! )

Dinner - Diet Coke Sloppy Joes on an Arnold Sandwich Thin, green beans and a diet Sunkist - 6 points - this is the first time I tried this recipe, and it was delicious! I'll post the recipe below!

Snack at softball - 1 bag popcorn and a bluberry muffin - 3 points

Dessert - Mini Microwave cake for One - 4 points
There was my day! I really hope there is a reason I haven't lost in the past few days....can you tell I'm depressed about it? LOL...enough of my whining...here is the recipe for the Sloppy Joes!

Diet Coke Sloppy Joes

POINTS values per serving - 3 points
Servings - 6

1 pound extra lean ground beef
1 medium onion
1 1/2 Tbsp all-purpose flour
1 cup Diet Coke
2/3 cup ketchup
2 Tbsp vinegar
1 Tbsp Worcestershire sauce
2 tsp dry mustard

Brown beef and onion in a large skillet. Drain well.

Stir in remaining ingredients. Mix well. Cover and simmer for 30 minutes.

ENJOY!!

I didn't take pictures today, besides the pictures of things that I post every day, so I will just post how the day went!

Breakfast - 1 cup Jumbo Krispies, 1/2 cup milk - 2 points

Lunch - Arnold Sandwich Thin Egg Sandwich, and 3 brownies - 8 points

Then, came the shower! I planned it all out and brought food for me to eat that I knew the points values, etc. Well, I got there, and it was a very small shower in a living room, so I felt very rude pulling out my own food when they had made a TON of food for us and were walking around serving it! I am very proud of how I did though. I said "No Thank You" to everything besides something that REALLY looked good, and then I just would take one small piece. They had all types of cheesecakes and pies, and I didn't have any. I had a handful of M&m's instead. I figured it must have been less points, but it filled my sweet craving. I just counted 12 points for the afternoon to be safe.

Of course, the shower ended at 3:30, so by dinner time I was hungry, but I knew I shouldn't really eat much, seeing that I had some higher point foods at the shower. I just had a 2 point blueberry muffin that I made yesterday, and called it a night.

I'm STARVING right now, but am going to go to bed and try to sleep it off cause I don't want to go over my points today! I'm going to leave you with the delicious blueberry muffin recipe that I made! Only 2 points!! DELICIOUS!!!

Big Fat Blueberry Muffins

1 cup whole wheat flour
1 cup fresh blueberries
1/2 cup light vanilla soymilk
1/4 cup sugar-free pancake syrup
1/4 cup fat-free liquid egg substitute
1/4 cup Splenda
3 Tablespoons brown sugar ( not packed )
2 Tablespoons light buttery spread, room temperature
2 Tablespoons No-Sugar-Added Applesauce ( Mott's Blueberry Delight if you can find it! )
1 1/2 teaspoons baking powder
1/2 teaspoon vanilla extract
1/4 teaspoon salt

Preheat oven to 400 degrees.

In a medium bowl, combine flour, splenda, brown sugar, baking powder, and salt, stirring until mixed well.

In a large mixing bowl, combine soymilk, syrup, egg substitute, butter, applesauce, and vanilla extract. Using an electric mixer or a whisk, mix until thoroughly blended. Do not worry if butter bits do not break up completely.

Add dry ingredients in the first mixing bowl to wet ingredients in the large mixing bowl and mix until completely blended. Then fold in blueberries.

Line a 6-cup muffin pan with baking liners and/or spray with nonstick spray. Evenly distribute batter among the 6 cups.

Bake in the oven for about 22 minutes, until a toothpick inserted in to the center of a muffin comes out clean. Enjoy!

May 1st, 2009

I had some great new food finds today, so I'm excited to share them with you! I went grocery shopping yesterday, spent a TON of money, but got alot of really good food! Here is my day!

Breakfast - 1 cup Jumbo Rice Krispies w/milk - 2 points

Lunch - Flat-out wrap with 2 1/2 Tablespoons of Reduced-Fat Peanut Butter, 1 banana, and then 2 tablespoons of 3 Cheese Light Ranch dressing with broccoli and carrots - 8 points

I have to say, an 8 point lunch is REALLY high for me...but I couldn't believe how full it kept me!! It was so delicious, and I wasn't even hungry until about 4 hours later! Pretty healthy too!

Snack - Smart Food Honey Multigrain Popcorn Clusters - 1 POINT!!! These taste just like Crunch N Munch...I can't believe they are only 1 point! You can find them in the chips/popcorn section...I got them at Walmart, but maybe you can get them at Wegmans, etc.

Dinner - 1 egg, 2 egg whites, 1 slice of 2% cheese on an Arnold Sandwich Thin - 4 points

Snack - 1 apple and an AWESOME peanut buttery dip! - 4 points - I will have to post the recipe for this dip soon! For 2 Tablespoons of dip, it's only 1 point! 2 points for 4 Tablespoons too. I used 5 Tablespoons cause I had an extra point, and it was so awesome with the apple! I tried another cool idea with it, but I haven't tasted it yet, so I'll wait until I test it to share it with you!

Dessert - Single serve microwave cake - 4 points - YUMMY YUMMY YUMMY!!!!

I can't believe I forgot to take a picture of my cake...sniff sniff...I was enjoying it way too much to think about it! I found the recipe at another blog, and ran out to buy the stuff to try it! Since I didn't take a picture, I'll just give you the recipe instead!

1/3 cup Reduced Sugar Chocolate Cake mix
1/3 cup Diet Coke

Stir together until smooth and microwave in a cereal bowl for 1 1/2 minutes. Stick a cake tester in it to make sure it is done.

Take 1 Tablespoon Reduced Sugar Chocolate Frosting and plop it on the top. Microwave for 10-15 seconds more just to melt the frosting. Then, spread it all over the top, and DEVOUR!! It tastes like a Chocolate Melting Cake! I'm going to have it again tonight, so I'll make sure to take a picture!

Well, I'm a couple days behind...believe it or not, I've actually still taken pictures of everything I've eaten the past few days, but I have been so busy and have not had time to post them! I'm not going to catch up 3 days now, so I'll start tomorrow by posting everything I ate today.

Weight Watchers was last night and I was down .8 of a pound. I'll take it...it's not up! :-) I love our meeting so much, everyone is so nice and supportive, and the leader is awesome. I feel like I'm really getting to know all of them, and its great. I would never change groups!

I figured since I wasn't really posting anything exciting today, I would post the recipe for my favorite "Chocolate Chocolate Brownie Cups." They are 2 points for 2 brownies....or 1 point a piece if you only want one! Let me know if you try them!

"Chocolate Chocolate Brownie Cups"
Butter-flavored cooking spray
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
8 large egg whites
2 cups raw sugar
1/2 cup unbleached all-purpose flour
1 cup unsweetened cocoa powder
2 teaspoons instant espresso powder
1 teaspoon baking powder
1 teaspoon salt
1/2 cup mini semi-sweet chocolate chips


Preheat the oven to 350°F. Thoroughly mist two 12-cup nonstick mini-muffin tins with spray.
Use a sturdy whisk or spatula to mix the applesauce, vanilla, egg whites, and sugar in a large mixing bowl until well combined. Add the flour, cocoa powder, espresso powder, baking powder, and salt. Stir until just combined and no lumps remain. Working in batches, fill each cup until just barely full. Sprinkle about one-fourth of the chips evenly over the brownies in each of the tins. Bake for 10 to 12 minutes, or until a toothpick inserted in the center comes out dry (a few crumbs are okay).
Transfer the tins to a cooling rack and cool for 5 minutes. Use a butter knife to gently lift the brownies from the muffin tins (if they stick, carefully run the knife around the edge of each cup). Cool on the rack for another 10 minutes. Repeat with the second half of the batter and the remaining chips.

MAKES 48 BROWNIE CUPS; 24 SERVINGS
Each 1-Decadent-Disk serving (2 brownies) has: 109 calories, 2g protein, 23g carbohydrates, 1g fat, less than 1g saturated fat, 0mg cholesterol, trace fiber, 139mg sodium.

I will be back tomorrow...its going to be a very tough weekend with wedding rehearsal dinner, a wedding, and then dinner at someone's house for their birthday on Sunday! Ahhhh!

Day One - April 7th, 2009

It was actually fun today taking pictures of everything I ate...it really kept my eating in check! I didn't have any bites, licks and tastes, cause I didn't want to cheat! :-)
For breakfast I had 1 cup Jumbo Rice Krispies, and 1/2 cup of milk for 3 points. It is my new favorite cereal cause it tastes great, and it's very low in points!
Then I was at work for the day, and I'm always so hungry there because I am sitting at a desk. I eat SO much just out of boredom and something to do, so I'm trying to do better at that! I had a yogurt for a snack ( 2 points ). I thought it was 1 point, but it was really 2...so I was a little disappointed, but it was still delicious!
My mom brought in homemade chicken noodle soup for lunch. It only contained chicken, chicken broth, onions and lots of carrots. I counted 5 points for the soup, and then I had 2 points worth of Ritz crackers....not quite enough crackers for my liking, but I would totally get carried away with Ritz, so I had to put a limit on them!
That was normally WAY more points than I eat for lunch, so I had to be really careful to not eat too much during the afternoon. Around 3:00pm I decided to have some Jollytime popcorn and a diet cherry pepsi. ( only 1 point! ) It really hit the spot! :-)
For dinner I had Chicken-Spinach Pie with Mashed potato crust. It is so delicious, and I figured it to be 8 points for 4 servings. It is pretty filling too, and very healthy! Sorry the picture doesn't do it justice...it really is good!
To finish off my night...I had my old faithful "Brownies with ice cream" for only 3 points! I tell ya, it's the best 3 points you'll ever eat! :-) I will eventually post the recipe for the brownies. Nothing like eating my delicious dessert and watching Biggest Loser after the kids are in bed!
Well, there you have it folks! Wasn't that so exciting????? I had a great day today, and didn't go over my points. Yeah for me!! Hopefully tomorrow goes as smooth! Have a good night!
